Goan Chicken Caldeen

Chicken Caldine is a thick creamy and deliciously non spicy yellow coconut curry. This curry is usually prepared by adding fish and veggies and the taste is divine. This is my mom’s kid friendly recipe which I thoroughly enjoy and now I can see my kids relishing this “yummy” chicken curry too.

Ingredients for the Marination:
👉🏻 1kg – Chicken thighs (cut into small pieces)
👉🏻 2 tbsps – Ginger Garlic paste
👉🏻 2 tbsps – Vinegar
👉🏻 1 tbsp – Turmeric powder
👉🏻 Salt to taste


Mix all the ingredients well and let it marinate for atleast 1 hour.


Ingredients for the masala paste:
👉🏻 2 cups – Coconut, grated
👉🏻 1 tbsp – Turmeric powder
👉🏻 1 tbsp – Coriander seeds
👉🏻 ½ tsp – Peppercorns
👉🏻 ½ tsp – Cloves
👉🏻 1” piece – Cinnamon stick
👉🏻 1 ½ tsp – Cumin seeds
👉🏻 1 tsp – Poppy seeds
👉🏻 5 nos – Garlic cloves
👉🏻 1” piece – Ginger
👉🏻 6 cups – Water

Add all these ingredients into a blender/mixer by adding 3 cups of water and grind this to a coarse paste. Pour it into a strainer and extract the spice – infused coconut milk. Transfer this scrap coconut back into the mixer, add the remaining 3 cups of water and repeat the process of extracting the coconut milk again. Keep aside.


Other Ingredients:
👉🏻 3 nos – Onions, finely chopped
👉🏻 1 – Tomato, finely chopped
👉🏻 2 nos – Green Chillies, slit
👉🏻 1 – Chicken Bouillon (optional)
👉🏻 1 tbsp – Vinegar
👉🏻 2 tbsps – Rice flour paste
👉🏻 Salt to Taste
👉🏻 Oil or Ghee for cooking

Process:
👉🏻 On a medium high flame, take a saucepot and add a little oil. Once hot, add the chopped onions and sauté till translucent.
👉🏻 Once done, add and fry the chopped tomato till mushy.
👉🏻 Time to add the marinated chicken pieces. Mix well. Cover and cook for about 3-4 minutes.
👉🏻 Uncover the saucepot and pour the coconut milk extract. Stir well.
👉🏻 Now add the chicken bouillon, vinegar, slit green chillies, rice flour paste and season with salt.
👉🏻 Mix well. Cover and cook until the chicken is done and the curry thickens, approx. for 8 – 10 minutes.
👉🏻 Serve hot with steaming boiled rice. Enjoy.
