Goan Pork Vindaloo

Pork Vindaloo is one of the most popular dishes in our Goan Cuisine. This unique sweet and mildly spiced dish will leave your taste buds tingling for more. I am happy to share this absolute delicious Vindaloo recipe which is my personal favourite. You can pick a meat of your choice ; chicken, beef, or lamb.

▪️ 500 gms – Pork belly
▪️ 1/2 cup – Kashmiri red chilli powder
▪️ 4 – Garlic (big cloves)
▪️ 1” – Ginger
▪️ 12 – Cloves
▪️ 1” – Cinnamon stick
▪️ 20 – Peppercorns
▪️ 1 tsp – Cumin seeds
▪️ 60 ml – Apple Cider Vinegar
▪️ 2 nos – Onions, finely chopped
▪️ 1 tbsp – Garlic, finely chopped
▪️ 1 tbsp – Ginger, finely chopped
▪️ 30 ml – Tamarind paste
▪️ 1 tbsp – Brown sugar
▪️ 1 cup – Water
▪️ 3 tbsps – Vegetable Oil
▪️ Salt to taste

▪️ To make the marinade, grind Kashmiri chilli powder, garlic, ginger, cloves, cinnamon stick, peppercorns, cumin seeds with vinegar to a get smooth Vindaloo paste. (You can add little extra water for grinding)
▪️ Wash and cut the meat into 1” pieces.
▪️ Add the prepared masala to the meat pieces, season with salt and mix well.
▪️ Allow it to marinate for about 1 hour or more.
▪️ Pour 1/2 a cup of water in the blender and reserve this Vindaloo masala water for later use.
▪️ Heat oil in a deep bottomed pan on a medium high flame.
▪️ Add the finely chopped onions and sauté till translucent.
▪️Add finally chopped ginger and garlic. Saute for 2 minutes.
▪️Add the marinated meat, mix well and let it cook for 5 minutes.
▪️Add the tamarind paste and brown sugar. Stir well.
▪️Now pour the reserved Vindaloo masala water into the pan. Stir well and bring it to a boil.
▪️Add 1/2 a cup of water and season with salt.
▪️Cover and simmer until the meat is cooked for about 20 minutes on medium flame.
▪️Serve this super delicious pork Vindaloo with pulao, sannas or bread.

    Great recipe! Can we not substitute Apple cider vinegar with Goan Palm vinegar? The flavour of palm vinegar brings out that X Factor .

      Goan Palm Vinegar is the best. Since I’m based in the UK i have to use Apple Cider Vinegar as a substitute.
