Lemon Rice

Lemon Rice also known as chitranna is a crunchy, flavorful and tangy dish that is so very easy to prepare. This dish is especially popular in south India but had now become one of the favourite rice dishes across the globe.

▪️ 3 cups – Cooked Basmati Rice
▪️ 1 tbsp – Mustard seeds
▪️ Handful of Curry Leaves
▪️ 1 ½ tbsp – Urad Dal
▪️ 2 tbsps – Chana Dal
▪️ ½ tsp – Asafoetida Powder
▪️ 1 tbsp – Garlic, finely chopped
▪️ ½ cup – Peanuts
▪️ 3 nos – Whole Red Chilles
▪️ 1 tsp – Turmeric Powder
▪️ 2 nos – Green Chillies, finely chopped
▪️ ½ cup – Fresh Lemon juice
▪️ 3 tbsps – Vegetable Oil
▪️ Salt to taste

▪️ Heat oil in a non-stick pan, over a medium heat.
▪️ Add the mustard seeds, curry leaves and as they begin to pop, add the urad dal, chana dal and sauté for a minute or until lightly colored.
▪️ Now add the asafoetida powder, chopped garlic and fry for a minute.
▪️ To this add peanuts and roast for another 1 minute until crunchy and deep golden.
▪️ Throw in the whole red chillies, finely chopped green chillies and turmeric powder. Mix well.
▪️ Now pour the lemon juice and cook for a minute stirring continuously until the mixture turns aromatic.
▪️ Lastly, add the cooled cooked basmati rice and give it a good stir.
▪️ Season with salt.
▪️ Serve with plain yoghurt or pickle.
