Goan Beef Ribs Curry

Goan Beef Ribs Curry or Aad Maas is a spicy, sweet and tangy curry prepared using aromatic indian spices. Enjoy this delicious curry with cooked rice, pulao or just dip in some bread.

Ingredients for the Marination:
πŸ‘‰πŸ» 1 kg – Beef Ribs
πŸ‘‰πŸ» 1 tbsp – Ginger Garlic Paste
πŸ‘‰πŸ» 50 ml – Vinegar
πŸ‘‰πŸ» Salt to taste

Cut, wash the beef ribs into 2” pieces. Combine all the ingredients well and let this marinate for atleast an hour.

Ingredients for the masala:
πŸ‘‰πŸ» 15 nos – Whole Dried Red Chillies
πŸ‘‰πŸ» 4 nos – Garlic cloves
πŸ‘‰πŸ» 1” piece – Ginger
πŸ‘‰πŸ» 1 Β½ tsps – Cumin seeds
πŸ‘‰πŸ» 15 – Cloves
πŸ‘‰πŸ» 20 – peppercorns
πŸ‘‰πŸ» 2” piece – Cinnamon stick
πŸ‘‰πŸ» 1 small ball tamarind(deseeds)
πŸ‘‰πŸ» 1 tbsp – Sugar
πŸ‘‰πŸ» 150ml – Vinegar
πŸ‘‰πŸ» 250ml – Water

Place all the ingredients in the blender/grinder and grind it well to form a smooth paste. Remove and keep aside.
In the same jar, pour 250 ml water and leave this preserve for later use.

Other ingredients:
πŸ‘‰πŸ» 3 nos – Onions, sliced
πŸ‘‰πŸ» 1 nos – Tomato, chopped
πŸ‘‰πŸ» 2 nos – Green Chillies, slit
πŸ‘‰πŸ» 3 tbsps, Olive Oil

πŸ‘‰πŸ» On a medium high flame, place a pressure cooker and pour 3 tbsps olive oil.
πŸ‘‰πŸ» Once hot, add the sliced onions and sautΓ© until caramelized.
πŸ‘‰πŸ» Now add the chopped tomato and the slit green chillies and sautΓ© for about 2 minutes.
πŸ‘‰πŸ» To this add the ground paste. Stir well and let it cook for about 3 minutes.
πŸ‘‰πŸ» Time to throw in the marinated ribs, the preserve and salt to taste. Mix thoroughly well and bring it to a boil.
πŸ‘‰πŸ» Cover the pressure cooker with the lid and cook this meat for about 4 to 5 whistles on a high flame.
πŸ‘‰πŸ» Turn off the flame and try to open the lid by slowly releasing the pressure. Give it a gentle stir.
