Tomato Pasta with Goan Pork Sausages

Goan sausages and pasta is a magical combo. Simple ingredients are blended together so well to give you an amazingly delicious pasta dish.
This recipe is ideal for all those Goan sausage lovers. 😎

Ingredients:
• 400 gms – Goan Pork Sausages
• 300 gms – Fusilli Pasta
• 1 – Onion, large
• 2 – Tomatoes, chopped
• 3 – Tomatoes, pureed
• 1 tsp – Granulated sugar, optional
• 200 ml – Single Fresh Cream
• 1 tbsps – Philadelphia Cream Cheese
• 1 tsp – Red chilli powder
• 6 – Garlic cloves, crushed
• 30 ml – White Wine or Red Wine
• 2 cups – Baby Spinach
• 1 tbsp – Dried Parsley
• 1 tsp – Black Pepper, crushed
• Olive oil as required
• Salt as per taste
• Grated or shaved Parmesan/Cheddar Cheese for garnishing
• Water as required


Process:
• Pour enough water in a large pan and bring it to a boil. Drop the pasta into the boiling water and cook according to the pack instructions.
• Drain the pasta, drizzle over with some oil, and leave aside to cool.
• Take a wok on a medium heat. Once hot, pour olive oil as required.
• Add crushed garlic cloves and sauté for a minute.
• Now add chopped onions and sauté till translucent.
• Stir in the tomato puree, chopped tomatoes, granulated sugar and red chilli powder. Simmer and cook for 5 minutes until the sauce is rich and thick.
• Add de-skinned Goan Sausage meat, cover and cook for 5 minutes.
• Stir in single fresh cream, cream cheese, white wine, crushed black pepper and salt to taste.
• Bring this sauce to a boil and allow the wine to evaporate. Turn off the flame.
• Tip off the cooked pasta, baby spinach and dried parsley in the sauce. Toss well for a minute to coat pasta well with the sauce.
• Serve immediately, garnished with freshly grated or shaved Parmesan / Cheddar cheese.


Notes:
• Adding Single Cream and Cream cheese cuts down the spice level of the sausages. Reduce the dairy products if you like it hot.
• Sprinkling sugar really brings out the flavor of the tomatoes but you can leave this ingredient out.
• If the sauce gets too thick, use the reserved pasta cooking water to loosen it up.
• You can also add your favorite chopped veggies.
• Freeze any leftovers in an airtight contain for up to 2 days.
